This post is a follow up to my first Keto post. Diligence: Do the work and Keto. 

In my first post, I covered basics and shared great Keto products. As a reminder, I am not a doctor or health care professional. Keto and gluten free are my eating plan and lifestyle choices that I have chosen to fight chronic illness and lose weight.

I get a lot of questions about Keto. Like other keto dieters, I also get snarky comments and health advice. 

But for me, the proof is in my health. 

It has been a couple weeks since I started back on Keto. I eat gluten free every day and have for a decade, but keto has taken some adjustments. I am down about 11 pounds overall in two months, 6 since I refocused and am actually doing the diet. I was only limiting carbs before the last two weeks.

I will share some of my favorite snacks and things to eat on Keto and include products to try below. 

My skin looks great, I am dropping weight at a moderate rate, but steadily. My itching, stomach issues, and overall energy levels have improved. My energy level has just skyrocketed in the last few days after getting stricter about what I allow in the way of alcohol or meat portions.  I love how inflammation was reduced almost immediately too. 

I would be crazy to stop this eating lifestyle that has changed my life the way gluten free did a decade ago.

As someone with Fibromyalgia and Celiac Disease, #myKetoGFdiet helps with inflammation, overall health, skin, headaches, stomach issues, and relieves itching and hand pain.

Basically for me, I use the term KetoGF to describe my low-carb/healthyfats/organic/sugarfree lifestyle that is also gluten free.

I am a real food lover. I still eat snacks, desserts, and lasagna, but I do it a healthier way.

Favorite small meals and snacks:

Full fat plain Greek yogurt, walnut pieces, 3-4 raspberries , cinnamon with hot tea and a lemon slice.

Hot chocolate (or pour over ice):  Almond milk with 2 Tbsp. heavy cream, 1-2  Stevia in the Raw Packets, dash cinnamon,  2 tsp cocoa

Cheese and nuts w olives: A few walnuts or almonds with some gouda slices, and a few olives with a cold drink like unsweet ice tea or sparkling water.

We order our favorite coffees for our Keurig or pick some up in bulk at Sam’s like Starbucks Pike Place Roast Medium Roast Single Cup Coffee for Keurig Brewers, 32 Count

Hot coffee with kind mini bars are my go to crunchy with a little sweet snack.  KIND Bar Mini’s, Gluten Free, 100 Calories, Low Sugar

I love to have coffee over ice by itself with heavy cream as a mid morning creamy break. 

Avocado as a side to any meal or made into a quick fresh guacamole. Dip green pepper spears, cucumber spears, or crunchy oven cheese rounds, (easy recipe for cheese rounds below).

Oven cheese rounds are like mini pizzas made with a small mound of cheese for the “crust” like a flat mini muffin size. Top with Italian seasonings, a salami or pepperoni round, garlic salt. Bake 8 minutes on parchment paper, on a cookie sheet at 350.

Deviled eggs

Boiled eggs on side of salad, by themselves, or chopped over tuna with a dill pickle spear on the side.

An over easy egg, Philadelphia cream cheese, olives, and asparagus.

Dark leafy greens with organic Ceasar dressing, topped with 1/4 cup strawberries, or a few raspberries, 2 Tbsp walnut or almond pieces, tbsp. Goat cheese or cream cheese on the side, oven cheese rounds.

Frittata: Try this frittata  from the Atlanta Journal Constitution with 3 total carbs, serves 1- 2 :  or my quick version for one below.

Preheat oven to 350
Pre-whisk couple eggs and 1/8 cup grated cheese, tsp of heavy cream, set aside.
Coat the bottom of a small oven-safe nonstick or well-seasoned cast-iron skillet lightly with olive oil and place over medium-high heat.
Add 1/4 cup total of diced onion and green pepper immediately and season lightly with salt. Cook, stirring frequently, until softened, 2-3  minutes.
Stir in diced ham if you have it and spread the mixture evenly over the bottom of the skillet.
Reduce to medium and
Pour egg/cheese mixture over top. cook for 1-2 minutes and move skillet to oven to finish for 2-3 minutes.

Favorite drinks:
Zevia Ginger Ale, 16 Ounce Can Zero with Calories or Sugar, naturally Sweetened, Carbonated Soda, Refreshing, Flavorful and TastyZevia is my beverage of choice for when I need a soft drink or want something cold and different.

Ice brand drinks as a occasional special treat. Sugar and carb free, but I limit drinks with sugar substitutes. 

My favorite things about my diet? Keto & GF are easy, and I don’t crave anything unless I cheat.

Weight loss so far since I started back a few weeks ago? Even with a couple of weekends where I cheated (and felt physically terrible), I am down 10 pounds, but more importantly, my clothes don’t feel like vices.
